Fresh Salsa

it is officially fall yet today feels like summer
it is windy and a little muggy
a big rain fall is coming

if you still have tomatoes kicking around here is a simple, quick, fresh salsa recipe
let’s enjoy summer just a little longer

Fresh Salsa

4 medium size tomatoes
1 green pepper
1 chili pepper
1/2 onion
1 Tbs apple cider vinegar
2 Tbs chopped cilantro
1 Tbs cumin
Salt and pepper
pinch of sugar

Chop all veggies as fine as you wish.
Put all ingredients in a bowl. Mix. Taste. Adjust seasoning. Eat!

ps. You don’t have to but I like to blanch the tomatoes and remove the skin.
For that just boil water in a small pot, plunge your tomatoes in, leave for 30 seconds to a minute or until the skin splits open. Cool and peel.
