Glazed Carrots

carrot time has arrived
I love carrots
the ones in my garden aren’t ready yet
but you may find them at the market
I know for a fact that they are now part of local CSA baskets
therefor
Lets eat them up

personally I’m happy to eat them just like that
carrots are so delicious
one of my favorite veggie
but, if you want to cook them, here is a simple recipe I found online

Balsamic Roasted Carrots

1 1/2 pounds carrots
2 Tbs olive oil
2 Tbs balsamic vinegar
salt and pepper
fresh parsley

Preheat oven to 400ºF
Line a cookie sheet with parchment paper
If you have nice fresh carrots no need to peel them, just rinse and dry them
(I peeled mine because I didn’t have fresh ones)
In a bowl mix oil, vinegar, little salt, little pepper
Toss carrots until well coated and place on cookie sheet
Roast 30 to 40 minutes depending how crisp or soft you like them
I cut mine in half because they were thick and I flipped them half way through to get them nice and crispy
Serve with chopped parsley because it’s pretty and it adds vitamins
Taste and add extra salt if you have been sweating all day
There are times when we do need a little extra salt in our diet
