in this hot muggy weather, who wants to cook
with the abundance of fresh tasty veggies we really don’t need to
this is why, today, I decided to rely on an old favorite: hummus
and eat fresh raw veggies right form the garden
here is a basic hummus recipe
as always you can add a little more of this or that
2 cups of cooked chickpeas
juice of one lemon
1 to several cloves of garlic
1/4 cup of tahini
1/4 cup olive oil
1 tbs cumin
Place all ingredients in a food processor. Blend until nice and smooth. You may need to add water if the consistency is too thick. Just add a little at a time. My son says to put an ice cube in the mix apparently it makes a smoother dip. I usually add a little bit of the cooking broth from the chickpeas instead of water. Adjust consistency and taste as needed.
Eat with you favorite veggies, use as a spread on sandwiches, with crackers or chips if you need that extra salt this time of year.
