Nettle (Urtica Dioica)

Nettle is rich in vitamins A, iron, potassium, magnesium, and calcium. It can be eaten raw when young or it can be steamed and used like you would spinach. You may also dry the leave and use them for tea. Among other things steamed nettle can be used as filling for quiche and spanakopitas.
